ice ice baby…blueberry icecream

and because blueberries were our number one berries this summer, it was about time to make some creamy blueberry icecream.

the girls have been pickin’ blueberries this summer from our two bushes in the garden und we have been picking blueberries in the moor nearby.not as much as last year when we travelled through norway and sweden.but, still, we got hooked again on those yummie berries, that i even bought frozen blueberries we added daily to our morning muesli and oats.

when i’m in search for a good recipe i often open my pinterst app and just look and look and look.i wanted a creamy consistence and i wanted it to be a bit ‘yoghurty’, if this is even an english word.and after looking through way too many recipe’s, oh yes – pinterest can be so overwhelming, i again, started mixing different recipes.

recipe for 500-750ml  of blueberry icecream:

  • 300 g blueberries (i even used the frozen ones) and some to decorate
  • 80 g sugar
  • 2 tsp vanilla extract
  • 200 g whipping cream
  • 100 g plain yoghurt (i used the fatty one with 3,8% of fat)

let the blueberries cook with the sugar and vanilla extract.then blend it and mix in the whipping cream and yoghurt.fill it in a bin and freeze for at least 6 hours (depending on your freezer).
