its all about eggs these days… spring is showing its signs and the chicken lay more eggs. my girls love, love and love eggs. in all varieties.

and because it was one of those weekend days where we had made some plans, i thought about a fast and easy,  yet a special and yummi lunch creation. i remembered scrolling through a recipe i’ve seen at pinterest and knew that was it.

it was super easy and fast to prepare and i’m glad i had an extra pepper the girls were munching while i was cutting and roasting all the veggies. to save some preperation time, i only stir fried all the vegetables in a pan and didn’t roast them in the oven for another 30 minutes. it still tasted great.
